Satay Sauce

2 onions

2 T peanut oil

3 T roasted peanuts

ΒΌ t chilli powder

2 T tomato sauce

1 T honey

2 T soy sauce

Juice of half a lime

Salt

 

Peel and slice one onion thinly.  Fry the onion in hot peanut oil.  Peel and finely chop the second onion and pound together with the peanuts and chilli powder in a mortar or use a liquidizer.  Add this paste to the pan and fry for a further 3 mins stirring constantly.  Gradually dilute the mixture with 1 cup or warm water and stir in the honey, tomato sauce and soy sauce.  Cook for a few minutes until the sauce has the consistency of single cream.  Season the sauce to taste with salt, soy sauce and lime juice.  Serve hot.

 

This sauce is used as an accompaniment for satays.

 

Mayonnaise

1 level t salt

1 level t mustard powder

2 eggs

3 cups vegetable oil

Juice of 1 lemon

 

Blend the salt, mustard and eggs in a liquidizer for a few min.  Gently pour in the oil and continue to blend until the mixture has emulsified. Then blend in the lemon juice.

 

Alioli Sauce

1 Cup mayonnaise

1 t crushed garlic

 

Blend the ingredients together

 

Tartar Sauce

1 cup mayonnaise

1 grated hard-boiled egg

1 finely chopped onion

1 t chopped chives

 

Mix all there ingredients together.

 

Curried Mayonnaise

1 t oil

1 t curry powder

2 cups mayonnaise

 

Heat the oil in a small pan and fry the curry powder for about 1 min, then allow it to cool. Blend it together with the mayonnaise. (The curry powder must be fried in order to eliminate the gritty texture)
